undhiyu

Dear diet..... 
Today's recipe is... Undhiyu
Ingredients:
250 gm potatoes, eggplant, yam, indian beans, fenugreek leaves,tomatoes
3 tbsp of sesame seeds, coriander chopped,lemon juice, green,carom seedschilli,ginger,garlic paste,spring garlic 
4 tbsp of besan
2 tsp of turmeric powder, coriander cumin powder,mustard seeds
1 whole red chilli
5 to 6 tbsp oil
Sev
Salt to taste
For kotha (wood apple ) chatani
1 wood apple
3 tbsp of coriander chopped, jaggery
1 tbsp of  spring garlic, green chillies
Salt to taste

Procedure:
Take Indian beans in cooker with 2 cups of water, salt and carom seeds. Cook it until 2 whistles.
Take a bowl, add besan, fenugreek leaves,lemon juice,salt,ginger,garlic,chilli paste,water in it. Make muthiya from it. 
Deep fry it.
Now take a bowl add spring garlic, turmeric powder, coriander powder,cumin powder,coriander, jaggery,salt, sesame seeds, chopped coriander, lemon juice oil and mix all well.
Now cut the eggplant  and stuff the above stuffing. 
Now take cooker add oil in it, add mustard seeds, whole red chili, as seeds popped up add stuffed egg plant, potato,yam and indian beans, muthiya in it. Add 1 cup of water.Cook it until 4 whistle. 
Now open the cooker, add  chopped tomatoes in it.
For wood apple chatni
In food processor add wood apple
3 tbsp of coriander chopped, jaggery
1 tbsp of  spring garlic, green chillies
Salt to taste. Make fine paste and chatni is ready.
Servings
Serve it with kotha( wood apple) chatni sev and sesame oil.
